Pepper Mushroom Tacos

Pepper Mushroom Tacos


For Filling
2 cups mushrooms
2 tbsp Avocadoil
1 tsp chopped garlic
1 tsp chopped garlic
1 tbsp black pepper
1/2 tsp cumin powder
1/2 tsp coriander powder
Salt as per taste

For the Pico de Gallo
2 medium fresh tomato
1/2 red onion
1 jalapeño pepper
Juice of 1 lime
Salt and pepper as per taste
Pinch ground cumin

For Garnish
Goats cheese
Fresh cilantro
Fresh jalapeño
Pico de Gallo
Lemon juice
Hard Shell Tacos


In a pan heat the Avocadoil
Once heated, add the chopped ginger and garlic and sauté for a minute
Once sautéed add the black pepper, cumin and coriander
Immediately add the chopped mushrooms and cook till softened
Add salt as per taste

For the pico de Gallo, finely chop and mix all the ingredients together

To Assemble the Taco

Take the hard shell taco, add fresh lettuce and fill in the pepper mushroom mixture
Garnish with the pico de gallo ie fresh tomato salsa along with goats cheese and cilantro
Serve with lemon juice
